- Masor Tenga — Assam's light, tangy fish curry soured with tomato, lemon or elephant apple
- Khar — An iconic alkaline Assamese dish made with filtered ash water, often with raw papaya and pulses
- Assamese Duck Meat Curry — Duck slow-cooked with ash gourd or pumpkin
- Aloo Pitika — Assamese mashed potato with mustard oil, onion, coriander and green chilli
- Pitha — Assamese rice-flour cakes (til, ghila, sunga) made especially during Bihu
- Joha Rice — Assam's fragrant aromatic winter rice, prized across India for its aroma
